Helpful Tips

     We know everyone is anxiously awaiting posts of our most recent cakes. We wanted to show that we had to start some where and that we have learned a ton over the last 5 years. A few tips we have learned and we feel need to be shared are:

1)ALWAYS ALWAYS ALWAYS read and follow your recipe. If it calls for BUTTER use BUTTER don't cut corners or think that another ingredient is good enough.. IT calls for a specific ingredient for a reason.

2) If your house is above 20 degrees Celsius plan to work in stages and work quickly. Chocolate and butter cream icing melts fast and fondant will sweat and be slippery and hard to control. We usually decorate in stages and our fridge is set to almost freezing. That being said if fondant gets to cold it WILL CRACK.

3) When using fondant or any icing always make more then you need. It's better to have to much rather than too little.

4) Google is your best friend and worst enemy. You can look up recipes and tips but remember you are looking on the WORLD wide web and everywhere is different from ingredients and supplies  to humidity and weather.So know and remember while something works for someone it may not work for you.
